Creamy-rich salted eggs with tomatoes

What is a salted egg? It’s a kind of food product that was preserved by soaking the duck eggs in brine, (or in a highly concentrated solution of salt in water (boiled). Before doing it make sure to rinse the duck eggs well, gently put the eggs inside a jar, pour the brine (make sure its not to hot because it might break the eggshells, then cover the jar. Preserve it for about 20 to 30 days, you can check one egg after few weeks if it’s already suitable to your taste. Through the years the process of making salted egg also changed, they added some flavors on it. This food product is very popular here in Asia, it is often used as an additional ingredient or flavoring in cooking dishes or desserts.

It’s a good idea to boil, steam or fry it first before eating or adding to dishes. The recipe below is very compatible with plain rice or fried rice and is very satisfying when paired with some fried fish or dried fish. The egg white has a salty taste, the yolk is rich, creamy and is less salty and as a whole when added to tomatoes and other ingredients, it taste good.

  • 2 salted eggs
  • 4 pcs tomatoes
  • Garlic
  • Onion
  • Ginger
  • 1/2 tsp black pepper


  • Wash your hands before cooking and prepare your ingredients and materials to ensure a clean and safe food preparation and to save time and effort.
  • Wash the salted eggs, remove the shell and fry it for few minutes.
  • After frying put it in a bowl then add the sliced tomatoes, garlic, onion, ginger and black pepper.
  • Combine the ingredients altogether.
  • Serve and enjoy!
